Raw bambooshoot is a favorite ingredient used especially in the cuisine of Assam and northeast India and is consumed abandonly by the locals with different traditional dishes. Pork with bambooshoot, fish head fry with bambooshoot and bambooshoot pickle are some of the local dishes of Assam and NE India that are loved by all local people. People in Assam also like to mix it with ‘Aloo Pitika’ (smashed potato) and have it with rice. When bamboo shoot  is used in preparation of any dish, the strong smell and the sour taste give the dishes a very unique taste. This is paired best with Bhoot Jolokiya.
