Elephant Foot Yam which is known as Jimikand or Suran in Hindi and Ulkosu in Assamese is a vegetable that is full of health benefits. It tastes like potato, grows underground and is good for many reasons. Ulkosu or Olkochu is basically seen in the cuisines of Assam, West Bengal, Bihar, and few of NE Indian states. It has also marked its presence in other traditional dishes from some parts of India, Bangladesh and some other countries of Asia as well. It is basically used in curries and as pickles. Sometimes, on consuming this yam you may feel an itchy throat, probably that’s the reason it is not that popular among all. But when it is boiled and cooked properly it doesn’t cause any problem. That is why here in Prakrity, we boil and process it properly so that you can have this homemade Suran achar without any worry. Homemade Ulkochu pickle is a recipe of boiled Ulkochu/Elephant Foot Yam mixed with garlic, chili, spices and preserved in vinegar and mustard oil. It tastes unique, good and flavourful. This pickle goes well with both rice and roti.
