Chicken with bambooshoot

It is one of the most popular dishes in Assam and the states of NE India. Especially in the village regions chicken is stuffed in bamboos with bambooshoot along with other local herbs and ingredients and is burned in fire. That is a super traditional way of cooking the dish. But in everyday cooking it is not possible for us to arrange a fireplace every time we cook the dish. So here is my version of cooking bambooshoot chicken-
Ingredients required-
1. Chicken- 1.5 kg
2. Bambooshoot (shredded and well fermented)- 3 teaspoon
3. Mustard oil- 1 table spoon
4. Onion (medium)- 2
5. Salt and turmeric- as required
6. Soy sauce (optional, for the colour)- 1 tea spoon
7. Mustard seeds- 1 tea spoon
8. Chillies- 2/3
Crackle the mustard seeds in hot oil and add finely chopped onions. Fry till golden brown. Add chicken pieces, salt, turmeric, chillies and fry for about 10 mins. Add half cup of water and cover it to boil. After the chicken pieces are cooked properly add soy sauce and bambooshoot. Mix well and cover for another 5 mins. It’s done.
